We are in constant and direct dialogue with them about grains, butter, and the character of different flours. And whenever we want to learn from masters and truly understand the knowledge behind traditional baking, we are willing to travel anywhere in the world.
Much of the baking industry today has become overly industrialized. We choose to work exclusively with people who want to rethink this approach and restore the true meaning and value of handmade baked goods.
