Our Story

We are a small bakery and restaurant in Budapest, located in Erzsébetváros and Ferencváros. We opened in the winter of 2019 with the dream of creating a place that brings people together.

Everything began when we started making croissants on an entirely new level, and many of our friends as well as supporters from our previous projects helped make it all possible.

For more than seven years, we have been dedicated to making the best food, coffee, and bread we can now across two locations in Budapest.

The Suppliers and Producers Behind Freyja

Great food can only be made from great ingredients. For us, “great” means that they are grown or produced responsibly – for the benefit of both nature and people. It means fairness and harmony with the soil and all the life it sustains.

We mainly work with farmers, suppliers, and producers who share these values and who also care deeply about understanding the why and the how behind their work.

Grains, dairy products, coffee, and chocolate are all essential ingredients for us, and we approach the stories behind them with genuine expertise and respect. Alongside using the highest-quality products, the integrity of the production process is equally important to us.

They are hardworking and deeply dedicated people who strive to change the system and make the production of meat and dairy natural and meaningful again. We are proud to work with them.

Community

A beautiful community has formed around the bakery without it, we truly would not exist.

We are endlessly grateful and humble because of this, and because of all those who return to visit us again and again.

They are the regulars in our shops, the students arriving for their morning wake-up, the office workers from the neighborhood, families, visitors coming from the market and the market vendors themselves, travelers arriving from the other side of the world, and people stopping by from across the city.

Thousands of breakfasts shared together, conversations, and greetings exchanged make all our days a little brighter. Every day, we strive to give the very best we can to this community.

Flour

For many, it is a mysterious white powder. Sometimes it still is for us too. It is incredible how many different things this simple ingredient can become.

The flours we use represent the highest possible quality. They are high in gluten and strong, which makes them stable and perfectly suited for baking beautifully structured, tall loaves of bread.

We also use whole-grain flour in all of our products, sourced from local farmers. Whole-grain flour contains more nutrients and fiber while requiring less processing and generating less waste.

Many of our baked goods also include ancient grains such as spelt, emmer, einkorn, and durum. The number of wheat varieties is almost endless—ranging from ancient grains to freshly harvested varieties from the previous season.

Each one has its own characteristics: they behave differently, taste different, and have different textures. Together, they contribute to the distinctive character of the breads and pastries we create.

Butter

Butter is the most important and defining ingredient in our croissants and many of our pastries.

After much experimentation, we chose French Elle & Vire butter. With its 84% fat content, it is not only ideal for croissants but also exceptionally high in quality and flavor.

The butter comes from Normandy, where butter-making has centuries of tradition. The cows graze freely for most of the year.

At the same time, we are continuously working to source butter from local producers without compromising quality or causing significant price increases. At the moment, we are testing potential products in laboratories.

Történetünk

Egy kis pékség és étterem vagyunk Budapest Erzsébetvárosában és Ferencvárosában. 2019 telén nyitottunk meg azzal az álommal, hogy olyan helyet teremtsünk, amely összehozza az embereket. Minden akkor kezdődött, amikor elkezdtünk egy teljesen új szinten croissant-t készíteni és sok barátunk és korábbi projektjeink  támogatói segítettek abban, hogy mindez megvalósuljon. 

Több, mint hét éve dolgozunk azon, hogy a lehető legjobb ételeket, kávét és kenyeret készítsük – ma már két budapesti helyszínen.
